Cauliflower Soup Recipe

This cauliflower soup recipe is full of flavor and simple to make. It’s vegetarian, low calories, and filling. Read on for the instructions to make this delicious healthy soup.

Prep time: 30 minutes

Cook Time: 45 minutes

Ingredients:

1 large head of cauliflower

3 tablespoons extra-virgin olive oil

fine salt

1 medium red onion

2 cloves garlic

2 tablespoons unsalted butter

2 1/2 cups of vegetable broth

Instructions :

Preheat oven to 400 degrees. On a baking sheet toss chopped cauliflower with 2 tablespoons of olive oil until evenly coated. Sprinkle with salt. Bake until cauliflower is tender and caramelized 35 to 45 minutes, tossing halfway.

When the cauliflower is cooked, in a soup pot add 1 tablespoon of olive oil over medium heat. Add the onion and 1/4 teaspoon of salt. Cook, stirring occasionally for 5 to 7 minutes.

Add the garlic, broth, and roasted cauliflower to the pot. Bring the mixture to a shimmer, cooking fo 20 minutes.

When the soup is done cooking let it cool for a few minutes. Then transfer the soup to a blender. This could be about 2 to 3 batches. Add the butter, blend and enjoy!
